The Phoenix

The Phoenix Restaurant brings Asian flair to Hudson Valley ingredients, with tantalizing dishes created by executive chef Ross Fraser. The Phoenix seats up to 120 and features two separate dining areas, one for adults and the other for families with children. Enjoy al fresco dining on our streamside deck or relax in the sophisticated ambiance of our stunning dining room and bar.

The Chef

Head Chef Ross Fraser lives by the culinary philosophy of using the freshest ingredients possible, delicately blending flavors and textures, and attending to a myriad of details in the presentation of his dishes. Before joining the Emerson culinary team, Chef Fraser, listed in the International Who's Who of Chefs, was employed in Scotland by the Duke and Duchess of Roxburghe Castle at their award winning Roxburghe Country House Hotel and Golf Course. Renowned for his fine cuisine at the original Emerson Inn, Chef Fraser continues to exceed guests' expectations.

The Menu

Chef Ross Fraser's new Phoenix menu infuses Asian flavors with ingredients native to the Hudson Valley. From a pan seared Peruvian bass fillet, to a center-cut pork chop topped with a blue cheese and pear gratin, each night at the Phoenix is a culinary delight.
